Today, we’re going to share with you our recipe for Squid Sukka, also known as Calamari Sukka, a popular and flavorful dish from the coastal region of Mangalore. Our Squid Sukka recipe is the perfect combination of tender squid, aromatic spices, and rich coconut, creating a burst of flavors in every bite.
Ingredients:
– 500g fresh squid, cleaned and cut into rings
– 2 onions, finely chopped
– 2 tomatoes, finely chopped
– 2-3 green chilies, slit lengthwise
– 1 inch ginger, finely chopped
– 3-4 garlic cloves, finely chopped
– 1 sprig curry leaves
– 1 tbsp tamarind extract
– 1/2 cup grated coconut
– 1 tsp mustard seeds
– 1/2 tsp turmeric powder
– 1 tsp red chili powder
– 1 tsp coriander powder
– 1/2 tsp cumin powder
– Salt to taste
– 2 tbsp coconut oil
Recipe:
1. Heat coconut oil in a pan and add mustard seeds. Once they start spluttering, add chopped onions and sauté until golden brown.
2. Add chopped ginger, garlic, green chilies, and curry leaves. Sauté for a few minutes until the raw aroma disappears.
3. Add the chopped tomatoes and cook until they turn mushy.
4. Now, add the turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Stir well and cook for a few minutes.
5. Add the cleaned squid rings and mix well with the masala. Cook for 5-6 minutes until the squid is almost cooked.
6. Add tamarind extract and grated coconut. Mix well and cook for another 5 minutes until the masala coats the squid perfectly.
7. Serve hot, garnished with fresh coriander leaves and accompanied by steamed rice or neer dosa. Enjoy the burst of flavors in every bite!
