– Coconut oil
– Mustard seeds
– Dried red chilies
– Curry leaves
– Asafoetida
– Coriander leaves

Recipe:
1. Rinse ½ cup of toor dal and pressure-cook it with 2 cups of water, a pinch of turmeric powder, and a few drops of coconut oil for 3-4 whistles. Set aside.
2. Soak a small lemon-sized ball of tamarind in warm water and extract the juice.
3. In a pressure cooker, add chopped shallots, tomatoes, green chilies, and the vegetables of your choice.
4. Add the tamarind extract, sambar powder, a pinch of turmeric powder, and salt to taste.
5. Pressure-cook the vegetables for 1-2 whistles until they are soft and cooked.
6. Once the pressure releases, add the cooked toor dal to the pressure cooker and mix well.
7. In a separate pan, heat coconut oil and splutter mustard seeds, dried red chilies, curry leaves, and a pinch of asafoetida.
8. Pour this tempering over the sambar and mix well.
9. Garnish with fresh coriander leaves and serve hot with steamed rice or idli.
