Batata Rassa Bhaji

1. Heat oil in a pan and add mustard seeds and cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
2. Add the grated ginger and minced garlic to the pan, followed by the chopped tomatoes. Cook until the tomatoes are soft and the oil starts to separate.
3. Now add the diced potatoes and green chilies to the pan. Mix well and cook for a few minutes.
4. Add turmeric powder, red chili powder, garam masala, and salt to the pan. Mix everything together and cook for a few more minutes.
5. Pour in enough water to cover the potatoes and bring the curry to a simmer. Cover the pan and cook until the potatoes are tender.
6. Once the potatoes are cooked, mash a few of them to thicken the curry. Adjust the seasoning if needed.
7. Garnish the Batata Rassa Bhaji with fresh coriander leaves and serve hot with steamed rice or chapatis.
