Ingredients:
– 500g beef, cut into bite-sized pieces
– 2 cups basmati rice
– 4 onions, thinly sliced
– 3 tomatoes, chopped
– 2 green chilies, chopped
– 1 tbsp ginger garlic paste
– 1/2 cup yogurt
– 1/4 tsp turmeric powder
– 1 tbsp garam masala
– 1/2 tsp cumin seeds
– 4 cloves
– 2-inch cinnamon stick
– 4 cardamom pods
– 1 bay leaf
– Handful of mint leaves
– Handful of cilantro leaves
– 4 cups water
– Salt to taste

Recipe:
1. In a large pot, heat some oil and add the cumin seeds, cloves, cinnamon stick, cardamom pods, and bay leaf. Saute until fragrant.
2. Add the sliced onions and cook until golden brown. Then, add the green chilies and ginger garlic paste. Cook for a few more minutes.
3. Add the chopped tomatoes and cook until they turn mushy. Then, add the turmeric powder, garam masala, and salt. Cook until the oil separates.
4. Add the beef pieces and cook until they are browned on all sides. Then, add the yogurt and cook until the beef is tender.
5. In a separate pot, cook the basmati rice with 4 cups of water and a pinch of salt until it is 70% cooked. Drain the rice and set aside.
6. In a large heavy-bottomed pot, layer the cooked beef masala, half of the cooked rice, and a sprinkle of mint and cilantro leaves. Repeat the layers and top with the remaining rice and herbs.
7. Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes until the rice is fully cooked and the flavors have melded together.
8. Serve the hot and fragrant Kerala style Beef Biryani with raita and enjoy!
