Ingredients:
– 2 cups basmati rice, soaked for 30 minutes and drained
– 500g chicken or mutton, cut into pieces
– 1 cup yogurt
– 2 onions, finely sliced
– 2 tomatoes, chopped
– 2 green chilies, slit
– 1/2 cup mint leaves
– 1/2 cup coriander leaves
– 1 tbsp ginger-garlic paste
– 1 tsp red chili powder
– 1/2 tsp turmeric powder
– 1 tsp biryani masala powder
– 4 cups water
– Salt to taste
– Ghee
– Oil
Recipe:
1. Marinate the chicken or mutton with yogurt, red chili powder, turmeric powder, biryani masala powder, ginger-garlic paste, salt, mint leaves, and coriander leaves for 1 hour.
2. Heat ghee and oil in a deep-bottomed pan, and fry the onions till golden brown. Remove half of the fried onions and set aside.
3. Add the tomatoes and green chilies to the pan and cook until the tomatoes are soft.
4. Add the marinated chicken or mutton to the pan and cook for 10 minutes.
5. Then, add the soaked and drained rice to the pan and mix well.
6. Pour in the water and bring to a boil. Reduce the heat, cover, and cook for 20 minutes or until the rice is done and the meat is tender.
7. Garnish with the remaining fried onions and serve hot with raita or salan.
