Ingredients:

– 2 medium-sized ridge gourds (heerekayi)
– 1 tbsp coconut oil
– 1 tsp mustard seeds
– 1 tsp cumin seeds
– 2-3 dry red chilies
– A pinch of hing (asafoetida)
– 1/2 tsp turmeric powder
– Salt to taste
– Fresh coriander leaves for garnish

Recipe:

1. Start by peeling the ridge gourd and chopping it into small pieces.
2. Heat the coconut oil in a pan and add the mustard seeds. Once they start to splutter, add the cumin seeds, dry red chilies, and hing.
3. Add the chopped ridge gourd to the pan and mix well. Let it cook for a few minutes.
4. Sprinkle turmeric powder and salt over the ridge gourd, and mix everything together.
5. Cover the pan and let the ridge gourd cook on low heat until it becomes soft and tender.
6. Once the ridge gourd is cooked, garnish with fresh coriander leaves and serve hot with steamed rice or roti.
