Ingredients for Mutton Kuska:
– 1 cup basmati rice
– 500 grams mutton pieces
– 2 onions, finely chopped
– 2 tomatoes, pureed
– 2 green chilies, slit
– 1-inch ginger, grated
– 4 cloves garlic, minced
– 1/2 cup yogurt
– 1 tbsp garam masala
– 1 tsp turmeric powder
– 1 tsp red chili powder
– Salt to taste
– 2 cups water
– Fresh coriander leaves for garnish

Ingredients for Mutton Curry:
– 500 grams mutton pieces
– 2 onions, finely chopped
– 2 tomatoes, pureed

– 1/2 cup coconut milk
– 1 tbsp coriander powder
– 1 tsp cumin powder
– 1 tsp turmeric powder
– 1 tsp red chili powder

Mutton Kuska Recipe:
1. Wash and soak the basmati rice for 20 minutes. Drain and set aside.
2. In a pressure cooker, heat oil and sauté the onions until golden brown.
3. Add the mutton pieces and cook until they are browned on all sides.
4. Add the tomatoes, green chilies, ginger, garlic, yogurt, garam masala, turmeric powder, red chili powder, and salt. Cook for 5 minutes.
5. Add the drained rice and water. Close the pressure cooker lid and cook for 2 whistles.
6. Once the pressure is released, fluff the rice with a fork and garnish with fresh coriander leaves.

Mutton Curry Recipe:
1. In a separate pot, heat oil and sauté the onions until translucent.
2. Add the mutton pieces and cook until they are browned on all sides.
3. Add the tomatoes, green chilies, ginger, garlic, coconut milk, coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Cook for 30 minutes or until the mutton is tender.
4. Garnish with fresh curry leaves before serving.
