Ingredients:
For the Batata Vada:
– 4 medium potatoes, boiled and mashed
– 1 tbsp oil
– 1 tsp mustard seeds
– 1 tsp cumin seeds
– 1 green chili, finely chopped
– 1 inch ginger, finely chopped
– 10-12 curry leaves
– 1/2 tsp turmeric powder
– salt to taste
– 2 tbsp chopped coriander leaves
– 1 tbsp lemon juice

For the Vada Pav:
– 4 pav buns
– 4-5 garlic chutney
– 4-5 green chili chutney
– butter for toasting

Recipe:
1. To make the Batata Vada, heat oil in a pan and add mustard seeds and cumin seeds. Once they splutter, add the green chili, ginger, and curry leaves.
2. Add the mashed potatoes, turmeric powder, and salt. Mix well and cook for 2-3 minutes.
3. Remove from heat and add the chopped coriander leaves and lemon juice. Mix until well combined.
4. Divide the mixture into 4 equal portions and shape them into round balls. Set aside.
5. To assemble the Vada Pav, slit the pav buns and spread garlic chutney and green chili chutney on the inner sides.
6. Place a potato ball between the buns and press gently to flatten.
7. Heat a pan and toast the assembled Vada Pav with a little butter until crispy and golden.
