1 cup vermicelli

A few curry leaves
2 tbsp oil
1/2 tsp turmeric powder
Salt to taste
2-3 cups water
Freshly chopped coriander leaves for garnish

In a large pan, heat the oil over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
Add the chopped onion, green chili, and curry leaves. Sauté until the onion is translucent.
Add the mixed vegetables and sauté for a few minutes until they are slightly tender.
Meanwhile, in a separate pan, dry roast the vermicelli until it turns golden brown. Set it aside.
Add the roasted vermicelli to the pan with the vegetables and mix well.
Pour in the water, turmeric powder, and salt. Stir and cover the pan. Let it cook for 7-8 minutes or until the vermicelli is cooked through and the water has evaporated.
Garnish with freshly chopped coriander leaves and serve hot.
