Ingredients:
1 cup basmati rice
2 cups water
1 cup sugar
1/4 cup ghee
1/4 cup mixed nuts (cashews, almonds, and raisins)
1/2 tsp cardamom powder
A pinch of saffron strands
A few drops of orange food color (optional)
1/4 cup dried coconut flakes
1/4 tsp rose water
1/4 tsp kewra water

Recipe:
Rinse the basmati rice until the water runs clear and soak it in water for 30 minutes.
In a pot, bring 2 cups of water to a boil and add the soaked rice. Cook until the rice is 70% done, then drain and set aside.
In a separate pan, heat the ghee and add the mixed nuts. Saute until they are golden brown, then remove and set aside.
In the same pan, add the boiled rice, sugar, cardamom powder, saffron strands, and orange food color. Mix well and cook on low heat for 10-15 minutes until the sugar has dissolved and the rice is cooked through.
Once the rice is cooked, add the sauteed nuts, dried coconut flakes, rose water, and kewra water. Stir gently to combine, then cover and simmer for another 5 minutes.
Remove from heat and let it sit for a few minutes before serving.
Garnish with extra nuts and saffron strands, if desired, and enjoy your homemade Meethe Chawal, also known as Zarda Pulao!
