Ingredients:
– 2 cups basmati rice
– 2 onions, thinly sliced
– 2 tomatoes, chopped
– 1 cup mixed vegetables (carrots, peas, beans, etc.)
– 1/2 cup yogurt
– 1/4 cup chopped mint leaves
– 1/4 cup chopped coriander leaves
– 2 green chilies, slit
– 1 cinnamon stick
– 3 cardamom pods
– 3 cloves
– 1/2 tsp turmeric powder
– 1 tsp red chili powder
– 1 tsp biryani masala
– Salt to taste
– 3 cups water
– Ghee for cooking
– Cashews and raisins for garnish

Recipe:
1. Rinse the basmati rice until the water runs clear, and soak it for 30 minutes.
2. In a large pot, heat some ghee and add the cinnamon, cardamom, and cloves. Sauté until aromatic.
3. Add the sliced onions and cook until golden brown.
4. Add the chopped tomatoes, green chilies, and mixed vegetables. Cook until the vegetables are slightly tender.
5. In a small bowl, mix the yogurt, turmeric, red chili powder, biryani masala, and salt. Add this mixture to the pot and stir well.
6. Drain the soaked rice and add it to the pot. Gently mix everything together.
7. Add 3 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and cook for 15-20 minutes or until the rice is cooked.
8. Once the rice is cooked, garnish with chopped mint and coriander leaves, cashews, and raisins.
9. Serve hot with raita or curry of your choice.
