Ingredients:
For the Gravy:
– 1 medium-sized cauliflower, cut into florets
– 2 onions, finely chopped
– 2 tomatoes, finely chopped
– 3-4 green chilies, slit
– 1-inch ginger, finely chopped
– 4-5 garlic cloves, minced
– 1/2 cup coconut milk
– 1/2 tsp turmeric powder
– 1 tsp red chili powder
– 1 tsp garam masala
– Salt to taste
– 2 tbsp oil
– Fresh coriander leaves for garnish

For the Spice Paste:
– 1-inch cinnamon stick
– 3-4 cloves
– 2 cardamom pods
– 1 tsp fennel seeds
– 1/2 cup grated coconut

Recipe:
1. In a pan, heat the oil and add the cinnamon, cloves, cardamom, and fennel seeds. Saute until fragrant.
2. Add the chopped onions, green chilies, ginger, and garlic. Cook until the onions turn golden brown.
3. Stir in the turmeric powder, red chili powder, and garam masala. Mix well.
4. Add the chopped tomatoes and cook until they turn mushy.
5. Meanwhile, grind the grated coconut into a smooth paste and keep it aside.
6. Once the tomatoes are cooked, add the cauliflower florets and sauté for a few minutes.
