Ingredients:
– 1 medium-sized bottle gourd, peeled and diced
– 1 onion, finely chopped
– 2 tomatoes, pureed
– 2-3 green chilies, slit
– 1-inch ginger, grated
– 3-4 cloves of garlic, minced
– 1 tsp mustard seeds
– 1 tsp cumin seeds
– 1/2 tsp turmeric powder
– 1 tsp red chili powder
– 1 tsp coriander powder
– 1/2 tsp garam masala
– Salt to taste
– Fresh coriander leaves for garnish
– 2 tbsp cooking oil
– 2 cups water
Recipe:
1. Heat oil in a pan and add mustard seeds and cumin seeds.
2. Once the seeds splutter, add chopped onions, green chilies, ginger, and garlic. Saute until the onions turn golden brown.
3. Add the tomato puree and cook until the oil begins to separate from the masala.
4. Stir in the turmeric powder, red chili powder, coriander powder, and garam masala. Cook for 2-3 minutes.
5. Add the diced bottle gourd and mix well with the masala.
6. Pour in 2 cups of water and season with salt. Cover and cook for 15-20 minutes, or until the bottle gourd is tender.
