Ingredients:
– 2 cups of basmati rice
– 1 bunch of fresh spinach, chopped
– 1 onion, finely chopped
– 2-3 green chilies, finely chopped
– 1 clove of garlic, minced
– 1-inch piece of ginger, grated
– 1 teaspoon cumin seeds
– 1 teaspoon garam masala
– Salt to taste
– 2 tablespoons of cooking oil
– Fresh coriander leaves for garnish
– Lemon wedges for serving

Recipe:
1. Rinse the basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
2. In a large pan, heat the cooking oil and add the cumin seeds. Once they start to sizzle, add the chopped onions, green chilies, garlic, and ginger. Sauté until the onions turn golden brown.
3. Add the chopped spinach to the pan and cook until it wilts and reduces in volume.
4. Stir in the garam masala and salt, then add the drained basmati rice. Mix well to combine all the ingredients.
5. Add 4 cups of water to the pan and bring it to a boil. Once boiling, reduce the heat to low, cover the pan, and let the rice cook for 15-20 minutes, or until the water is fully absorbed and the rice is cooked through.
6. Once the rice is cooked, fluff it with a fork and garnish with fresh coriander leaves.
7. Serve the Palak Rice hot with a squeeze of lemon juice on top.
