– 1 cup split pigeon peas (toor dal)

– 3-4 garlic cloves, minced
– 1 tsp cumin seeds
– 1 tsp turmeric powder
– 1 tsp red chili powder
– Salt to taste
– 2 tbsp ghee or oil
– Fresh coriander leaves for garnish

Recipe:

1. Rinse the toor dal thoroughly and cook it in a pressure cooker with 2.5 cups of water until soft and mushy. Set aside.
2. In a separate pan, heat ghee or oil and add cumin seeds. Once they start to sizzle, add chopped onions and sauté until golden brown.
3. Add grated ginger and minced garlic, and sauté for a minute until the raw smell disappears.
4. Add chopped tomatoes, green chilies, turmeric powder, and red chili powder. Cook until the tomatoes turn soft and oil starts to separate.
5. Add the chopped spinach and cook until it wilts down and blends with the tomato mixture.
6. Now, add the cooked toor dal to the spinach mixture and mix well. Add water to adjust the consistency if needed.
7. Let the dal simmer for a few minutes, allowing the flavors to meld together. Adjust seasoning as per taste.
8. Garnish with fresh coriander leaves and a dollop of ghee.
9. Serve hot with rice or roti, and enjoy the hearty goodness of Spinach Dal.
