Methi Pulao Rice Kannada

– 4 cups of water
– 2 tbsp ghee (clarified butter) or oil
– Fresh coriander leaves for garnish

Recipe:
1. Rinse the basmati rice in cold water and soak it for 30 minutes. Drain and set aside.
2. Heat ghee or oil in a large pot or pressure cooker over medium heat. Add the cinnamon stick, cloves, cardamom pods, bay leaf, cumin seeds, and mustard seeds. Sauté for 1-2 minutes until fragrant.
3. Add the chopped onions and sauté until they turn golden brown. Then, add the minced garlic and grated ginger. Cook for another 2-3 minutes.
4. Stir in the chopped tomato and cook until it softens and the oil starts to separate from the masala.
5. Add the fresh fenugreek leaves and sauté for 5-6 minutes until they wilt and release their aroma.
6. Stir in the turmeric powder, red chili powder, and garam masala. Cook for 2-3 minutes to roast the spices.
7. Add the soaked basmati rice and season with salt. Gently mix everything together.
8. Pour in the water and bring it to a boil. Reduce the heat to low, cover the pot, and let the rice cook for 15-20 minutes, or until all the water is absorbed and the rice is tender.
9. Once cooked, fluff the rice with a fork and garnish with fresh coriander leaves.
10. Serve the Methi Pulao rice hot with a side of yogurt or your favorite raita.
