– 8-10 small brinjals
– 1 cup grated coconut
– 2 onions, finely chopped
– 1 tomato, finely chopped
– 1 tsp mustard seeds
– 1 tsp cumin seeds
– 1 tsp turmeric powder
– 1 tsp red chili powder
– 2-3 tbsp tamarind pulp
– Salt to taste
– 2 tbsp oil
– Fresh coriander leaves for garnishing

Recipe:
1. Wash the brinjals and make a crosswise slit at the base, taking care not to cut them into halves.
2. In a bowl, mix grated coconut, chopped onions, chopped tomatoes, turmeric powder, red chili powder, tamarind pulp, and salt to form a stuffing mixture.
3. Stuff the brinjals with the prepared mixture and keep the remaining mixture aside.
4. In a pan, heat oil and add mustard seeds and cumin seeds, allowing them to splutter.
5. Place the stuffed brinjals in the pan and cover with a lid, allowing them to cook on low heat.
6. After a few minutes, add the remaining stuffing mixture and some water to the pan.
7. Cook the brinjals until they are soft and the gravy has thickened.
8. Garnish with fresh coriander leaves and serve hot with rice or roti.
