Ingredients:
– 2 cups basmati rice
– 1 pound chicken, cut into pieces
– 2 onions, sliced
– 2 tomatoes, chopped
– 2 green chilies, slit
– 1-inch ginger, grated
– 5 cloves garlic, minced
– 1 cinnamon stick
– 3 cardamom pods
– 5 cloves
– 1 bay leaf
– 1/2 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon garam masala
– Salt to taste
– A handful of mint leaves
– A handful of cilantro, chopped
– 4 cups water
– 2 tablespoons oil
– 1 tablespoon ghee

Recipe:
1. Rinse the basmati rice under cold water and soak it for 30 minutes.
2. In a pressure cooker, heat oil and ghee over medium heat. Add the whole spices and sauté for a minute.
3. Add the sliced onions and cook until they turn golden brown.
4. Stir in the ginger, garlic, and green chilies. Cook for a minute.
5. Add the chopped tomatoes and cook until they become soft.
6. Now, add the chicken pieces and cook until they change color.
7. Stir in the turmeric powder, red chili powder, and garam masala. Cook for 2-3 minutes.
8. Drain the soaked rice and add it to the pressure cooker. Gently mix to combine with the chicken and spices.
9. Pour in the water and season with salt. Give it a good stir.
10. Close the pressure cooker with its lid and cook for 2 whistles.
11. Turn off the heat and let the pressure release naturally.
12. Finally, garnish with fresh mint leaves and chopped cilantro. Serve hot with raita or salad.
