Ingredients:
1 cup Rajma (kidney beans), soaked overnight
2 onions, finely chopped
2 tomatoes, diced
2 green chilies, slit
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 tablespoon red chili powder
1 tablespoon coriander powder
1 teaspoon garam masala
1/2 teaspoon amchur (dry mango powder)
Salt to taste
2 tablespoons oil
Fresh coriander leaves for garnish

Recipe:
Boil the soaked Rajma until tender and set aside.
Heat oil in a pan and add cumin seeds. Once they start spluttering, add the onions and green chilies. Sauté until the onions turn golden brown.
Add ginger-garlic paste and sauté for a few more minutes.
Add the tomatoes and cook until they turn mushy.
Add turmeric powder, red chili powder, coriander powder, and salt. Cook until the oil separates from the masala.
Add the boiled Rajma and mix well. Add water if needed to adjust the consistency of the curry.
Simmer for a few minutes and add garam masala and amchur. Cook for a couple of minutes.
Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
