Ingredients:
– 500g of fresh fish (preferably rohu or mackerel)
– 2 onions, finely chopped
– 3 tomatoes, pureed
– 2 green chilies, slit
– 1 tbsp ginger-garlic paste
– 1 tbsp red chili powder
– 1 tbsp coriander powder
– 1/2 tsp turmeric powder
– 1/2 tsp mustard seeds
– 1/2 tsp fenugreek seeds
– A sprig of curry leaves
– 1/4 cup tamarind pulp
– Salt to taste
– 2 tbsp oil
– Fresh coriander leaves for garnishing

Recipe:
1. Clean and wash the fish thoroughly. Marinate with salt and turmeric powder and set aside.
2. Heat oil in a pan and add mustard seeds, fenugreek seeds, and curry leaves. Allow them to splutter.
3. Add the chopped onions and green chilies. Saute until the onions turn golden brown.
4. Stir in the ginger-garlic paste and cook until the raw smell disappears.
5. Add the red chili powder, coriander powder, and turmeric powder. Mix well and cook for a few minutes.
6. Pour in the tomato puree and cook until the oil separates from the masala.
7. Add the marinated fish pieces and tamarind pulp. Gently combine everything, taking care not to break the fish.
8. Pour enough water to cover the fish and bring to a simmer. Cook until the fish is tender and the gravy thickens.
9. Garnish with fresh coriander leaves and remove from heat.
