Ingredients:
– 1 cup semolina (sooji)
– 2 tablespoons ghee or oil
– 1 teaspoon mustard seeds
– 1 teaspoon cumin seeds
– 1 onion, finely chopped
– 1 green chili, finely chopped
– 1/2 inch ginger, finely chopped
– 10-12 curry leaves
– 2 tablespoons cashews
– 1/2 cup mixed vegetables (carrots, peas, bell peppers)
– 2 cups water
– Salt, to taste
– Fresh cilantro, for garnish
– Lemon wedges, for serving

Recipe:
1. Heat the ghee or oil in a pan over medium heat.
2. Add the mustard seeds and cumin seeds and let them crackle.
3. Add the chopped onion, green chili, ginger, curry leaves, and cashews. Saute until the onions turn translucent.
4. Add the mixed vegetables and sauté for a few minutes until they are slightly tender.
5. Add the semolina (sooji) to the pan and roast it for 3-4 minutes until it turns aromatic and light golden brown.
6. Carefully add the water to the pan while stirring continuously to prevent lumps from forming.
7. Cover the pan with a lid and let the Upma cook for 4-5 minutes on low heat until the water is absorbed and the Upma is cooked through.
8. Season with salt and garnish with fresh cilantro.
9. Serve hot with a wedge of lemon for an extra burst of flavor.
