Ingredients:
– 200g paneer (cottage cheese), cubed
– 3 large tomatoes, finely chopped
– 2 onions, thinly sliced
– 1 inch ginger, grated
– 4-5 cloves of garlic, minced
– 1/2 cup cashew nuts
– 1/2 cup fresh cream
– 2-3 green chilies, slit
– 1 teaspoon cumin seeds
– 1 teaspoon red chili powder
– 1 teaspoon garam masala
– 1 teaspoon kasuri methi (dried fenugreek leaves)
– Salt and sugar to taste
– Fresh cilantro for garnish

Recipe:
1. Heat a tablespoon of oil in a pan and add the cumin seeds. Allow them to splutter.
2. Add the sliced onions and sauté until they turn golden brown. Then, add the grated ginger and minced garlic. Sauté for a few minutes until the raw smell disappears.
3. Now, add the chopped tomatoes and cashew nuts. Cook until the tomatoes turn mushy and the mixture thickens.
4. Allow the mixture to cool and then blend it into a smooth paste.
5. In the same pan, heat a tablespoon of butter and add the slit green chilies. Sauté for a minute and then pour in the tomato-onion paste.
6. Stir in the red chili powder, garam masala, salt, and sugar. Cook for a few minutes until the masala releases oil from the sides.
7. Pour in the fresh cream and mix well. Add a cup of water and bring the gravy to a gentle boil.
8. Finally, add the cubed paneer and kasuri methi. Simmer for a couple of minutes until the paneer is heated through and the flavors are well combined.
9. Garnish with fresh cilantro and serve hot with naan or jeera rice.
