– 1 tsp mustard seeds
– 1/2 tsp turmeric powder
– Salt to taste
– 2 tbsp oil

Recipe:
1. Cook the rice in a large pot of boiling water until tender. Drain and set aside.
2. Wash the spinach thoroughly and blanch it in boiling water for 2-3 minutes. Drain and blend it into a smooth paste. Set aside.
3. In a large pan, heat the oil over medium heat. Add the cumin seeds and mustard seeds and let them splutter.
4. Add the chopped onion, green chilies, ginger, and garlic. Saute until the onions are golden brown.
5. Add the spinach paste and turmeric powder. Cook for a few minutes until the raw smell of the spinach goes away.
6. Add the cooked rice and mix well with the spinach mixture. Season with salt to taste.
7. Cover and cook for 5-7 minutes, allowing the flavors to meld together.
8. Serve hot with a side of raita or pickle.
