Ingredients:
– 2 cups all-purpose flour
– 4-5 medium-sized onions, finely chopped
– 1 teaspoon cumin seeds
– 1 teaspoon fennel seeds
– 1 teaspoon red chili powder
– 1/2 teaspoon turmeric powder
– Salt to taste
– Oil for frying
– Fresh coriander leaves for garnish

Recipe:
1. In a mixing bowl, combine the all-purpose flour, a pinch of salt, and 2 tablespoons of oil. Gradually add water and knead the mixture into a smooth dough. Cover the dough and let it rest for 15-20 minutes.
2. In a separate pan, heat 2 tablespoons of oil and add the cumin seeds and fennel seeds. Once they start spluttering, add the finely chopped onions and sauté until they turn golden brown.
3. Add the red chili powder, turmeric powder, and salt to the onion mixture. Stir well and cook for an additional 2-3 minutes. Remove from heat and let the mixture cool.
4. Divide the rested dough into small balls and flatten them into small discs. Place a spoonful of the onion filling in the center and seal the edges to form a stuffed ball. Gently flatten the ball into a disc without letting the filling come out.
5. Heat oil in a deep pan for frying. Once the oil is hot, carefully slide in the stuffed discs and fry until they turn golden brown and crispy.
6. Remove the kachoris from the oil and drain the excess oil on a paper towel. Garnish with fresh coriander leaves and serve hot with a side of chutney or pickle.
