Crispy Masala Dosa Recipe With Potato Filling Red Chutney And White Chutney

– Today, I am excited to share with you my recipe for Crispy Masala Dosa with a mouthwatering Potato Filling and two delectable chutneys – Red Chutney and White Chutney.

Ingredients:
– For the Dosas:
– 1 cup rice
– 1/2 cup urad dal
– Salt to taste
– Oil for cooking
– For the Potato Filling:
– 3-4 medium potatoes, boiled and mashed
– 1 onion, finely chopped
– 2 green chilies, finely chopped
– 1/2 tsp mustard seeds
– 1/2 tsp turmeric powder
– A handful of curry leaves
– For the Red Chutney:
– 2-3 dry red chilies
– 2-3 garlic cloves
– 1 small piece of tamarind
– Salt to taste
– For the White Chutney:
– 1/2 cup grated coconut
– 1-2 green chilies
– A small piece of ginger
– Salt to taste
– Water as needed

Recipe:
– To make the dosa batter, soak the rice and urad dal separately for 5-6 hours. Then, grind them to a smooth batter and let it ferment overnight.
– For the potato filling, heat oil in a pan, add mustard seeds, curry leaves, onion, green chilies, and turmeric. Sauté until onions are golden brown. Add mashed potatoes and mix well. Set aside.
– For the red chutney, grind all the ingredients together to a smooth paste. Adjust the seasoning and set aside.
– For the white chutney, grind all the ingredients with enough water to form a smooth paste. Adjust the seasoning and set aside.
– Heat a non-stick pan, pour a ladleful of dosa batter and spread it in a circular motion to make a thin dosa. Drizzle oil around the edges and cook until crispy.
– Spread the red chutney on one half of the dosa, the white chutney on the other half, and place a generous amount of potato filling in the center. Fold the dosa and serve hot.
