Today, I am excited to bring you a classic South Indian dish, Brinji Rice, also known as Brinji Sadam in Tamil. This flavorsome and aromatic rice dish is a staple in Tamil Nadu and is a must-try for anyone who loves South Indian cuisine.

Ingredients:
– 1 cup basmati rice
– 1 onion, thinly sliced
– 1 tomato, chopped
– 2 green chilies, slit
– 1-inch piece of ginger, finely chopped
– 3-4 cloves of garlic, minced
– 1/2 cup mixed vegetables (carrots, peas, beans)
– 1/4 cup mint leaves
– 1/4 cup coriander leaves
– 1/4 cup coconut milk
– 2 cups water
– Salt to taste

Spices:
– 1-inch cinnamon stick
– 2-3 cloves
– 2-3 cardamom pods
– 1 star anise
– 1/2 tsp fennel seeds
– 1/2 tsp cumin seeds
– 1/2 tsp turmeric powder
– 1/2 tsp red chili powder
– 1/2 tsp garam masala

Recipe:
– Rinse the basmati rice under running water and soak for 30 minutes. Drain and set aside.
– In a pressure cooker or a heavy-bottomed pan, heat 2-3 tbsp of oil and add the whole spices (cinnamon, cloves, cardamom, star anise, fennel seeds, and cumin seeds).
– Once the spices release their aroma, add the sliced onions and sauté until golden brown.
– Add the chopped tomatoes, green chilies, ginger, and garlic. Cook until the tomatoes turn mushy.
– Add the mixed vegetables, mint leaves, and coriander leaves. Sauté for a few minutes.
– Add the soaked and drained rice to the pot and sauté for 2-3 minutes.
– Pour in the coconut milk and water. Add salt, turmeric powder, red chili powder, and garam masala.
– Mix well and bring to a boil.
– Close the lid and cook for 2 whistles on medium heat. (If using a pan, cover and cook on low heat until the rice is done).
– Once the pressure is released, open the cooker or pan and fluff the rice gently with a fork.
– Serve hot with raita or your favorite South Indian curry.
