– 1 tsp cumin seeds
– 1 tsp mustard seeds
– 2-3 green chilies, slit
– 2-3 cloves garlic, minced
– 2-3 tbsp oil
– Fresh coriander leaves for garnish
– Salt to taste

Recipe:
1. In a bowl, mix the tamarind pulp and curd together. Add the turmeric powder, red chili powder, and coriander powder to the mixture and set it aside.
2. Heat oil in a pan and add cumin seeds and mustard seeds. Once they splutter, add the chopped onions and green chilies. Sauté until the onions turn golden brown.
3. Add the minced garlic and cook for another couple of minutes. Then, add the brinjals and sauté for a few minutes until they are slightly cooked.
4. Pour the tamarind-curd mixture over the brinjals and stir gently. Add salt to taste and cover the pan. Let it cook on a low flame until the brinjals are soft and the gravy thickens.
