Nellikai Thokku Amla Pickle Gooseberry Oorugai Recipe

Ingredients:

– 500g gooseberries (nellikai)
– 1 cup chopped coriander leaves
– 1/2 cup grated jaggery
– 1/4 cup red chili powder
– 1/4 cup mustard seeds
– 1/4 cup fenugreek seeds
– 1/4 cup sesame oil
– 1 teaspoon asafoetida
– Salt to taste

Recipe:

– Start by washing the gooseberries and patting them dry. Once dry, cut them into small pieces and set aside.
– Heat the sesame oil in a pan and add the mustard seeds and fenugreek seeds. Allow them to splutter before adding the asafoetida.
– Next, add the chopped gooseberries to the pan and sauté them for a few minutes until they start to soften.
– Add in the red chili powder and salt, stirring well to evenly coat the gooseberries. Let the mixture cook for a few more minutes.
– Once the gooseberries are soft and the spices are well incorporated, add the grated jaggery and mix it in thoroughly.
– Finally, add the chopped coriander leaves and cook for a few more minutes before removing the thokku from the heat.
– Allow the Nellikai Thokku to cool before transferring it to a clean, dry jar for storage.
– Your delicious Amla Pickle or Gooseberry Oorugai is now ready to be enjoyed as a tasty accompaniment to any South Indian meal!
