Ingredients:

1 cup of semolina (suji/rava)
1 cup of sugar
3 cups of water
A pinch of saffron strands
A handful of cashew nuts
A handful of raisins
1/4 cup of ghee (clarified butter)
1/2 teaspoon of cardamom powder
A few drops of yellow food coloring (optional)

Recipe:

In a deep-bottomed pan, heat the ghee over medium heat.

Add the cashew nuts and raisins, and sauté them until they turn golden brown. Remove them from the pan and set them aside.

In the same pan, add the semolina and roast it until it turns golden brown and gives off a nutty aroma.

In a separate pot, bring the water to a boil. Add the saffron strands and sugar, and stir until the sugar is completely dissolved.

Carefully pour the hot sugar syrup into the pan with the roasted semolina. Be cautious as it may sizzle and splutter.

Stir vigorously to prevent lumps from forming. Add the cardamom powder and food coloring, if using.

Cover the pan and let the Rava Kesari simmer on low heat for a few minutes, allowing the semolina to absorb the sugar syrup and cook through.

Once the Rava Kesari reaches the desired consistency, garnish it with the sautéed cashew nuts and raisins.
