– 4-6 small to medium-sized brinjals (eggplants), diced into bite-sized pieces
– 2 tbsp oil
– 1 tsp mustard seeds
– 1 tsp cumin seeds
– 1 large onion, finely chopped
– 2-3 garlic cloves, minced
– 1-inch piece of ginger, grated
– 2 tomatoes, finely chopped
– 1 tsp turmeric powder
– 1 tsp red chili powder
– 1 tsp coriander powder
– 1/2 tsp garam masala
– Salt to taste
– Fresh cilantro leaves for garnish

Recipe:
1. Heat the oil in a large pan over medium heat. Add the mustard seeds and cumin seeds and let them splutter.
2. Add the chopped onion, garlic, and ginger to the pan and sauté until the onions turn golden brown.
3. Add the diced tomatoes and cook until they turn soft and mushy.
4. Stir in the turmeric powder, red chili powder, coriander powder, and salt. Cook for a few minutes until the spices are fragrant.
5. Add the diced brinjals to the pan and mix well with the spice mixture. Cook for 5-7 minutes, stirring occasionally.
6. Sprinkle the garam masala over the brinjal mixture and mix well. Cook for an additional few minutes until the brinjals are tender.
7. Garnish with fresh cilantro leaves and serve hot with rice or roti.
