Ingredients:

1 cup of rice
½ cup of moong dal (yellow lentils)
4 cups of water
1 tablespoon of ghee (clarified butter)
1 teaspoon of cumin seeds
1 teaspoon of black peppercorns
1 inch piece of ginger, finely chopped
A pinch of asafoetida (hing)
Salt, to taste
For garnish:
10-12 cashew nuts
1 tablespoon of black peppercorns, crushed
A handful of fresh curry leaves

Recipe:

Rinse the rice and moong dal under running water and set aside.
In a pressure cooker, add the rice, moong dal, water, and a pinch of salt. Cook on high heat until the pressure whistle goes off 3-4 times.
Once the pressure is released, open the cooker and give the mixture a good stir, ensuring that the rice and dal are well combined.
In a separate pan, heat the ghee and add the cumin seeds, black peppercorns, ginger, and asafoetida. Fry until the spices release their aroma.
Pour this mixture over the rice and dal and mix well. Add salt to taste and mix again.
In the same pan, add the cashew nuts and roast until they turn golden brown. Add the crushed peppercorns and curry leaves and fry until the leaves turn crispy.
Pour this mixture over the rice and dal and mix well.
Your Ven Pongal is now ready to be served hot with coconut chutney or sambar.
