Ingredients:
– 1 small white pumpkin (vellai poosanikai)
– 1 cup moong dal
– 1-2 green chilies
– ½ tsp turmeric powder
– Salt to taste
– For Grinding:
– ¼ cup grated coconut
– 1 tsp cumin seeds
– 2-3 garlic cloves
– For Tempering:
– 1 tbsp coconut oil
– 1 tsp mustard seeds
– 1 tsp urad dal
– Few curry leaves
– 2 dry red chilies

Recipe:

1. To begin, peel the white pumpkin and cut it into small cubes.
2. In a pressure cooker, add the cubed pumpkin, moong dal, green chilies, turmeric powder, and salt.
3. Add enough water and pressure cook for 3-4 whistles.
4. Once the pressure releases, mash the cooked pumpkin and dal mixture lightly.
5. In a blender, grind the grated coconut, cumin seeds, and garlic cloves to a coarse paste.
6. Add the ground paste to the cooked pumpkin dal mixture.
7. Adjust the consistency by adding water if needed and let it simmer for 5-7 minutes.
8. Heat coconut oil in a pan for tempering.
9. Add mustard seeds and urad dal.
10. Once the mustard seeds splutter and urad dal turns golden, add the curry leaves and dry red chilies.
11. Pour the tempering over the prepared vellai poosanikai kootu.
12. Mix well and remove from heat.
13. Serve hot with steamed rice or roti.
