Ingredients:
– 2 cups dried white peas

– 1-inch piece of ginger, grated

– 2 tablespoons coriander-cumin powder
– Salt to taste
– 1 tablespoon sugar
– 1 cup sev
– Fresh coriander leaves, chopped
– 4-5 pav or dinner rolls

Recipe:
1. Soak the dried white peas in water overnight. Drain and rinse the peas before cooking.
2. In a pressure cooker, add the soaked peas, enough water to cover them, and a pinch of salt. Cook for 3-4 whistles, or until the peas are soft.
3. In a separate pan, heat oil and add the chopped onion. Cook until golden brown, then add the minced garlic, grated ginger, and chopped green chilies. Sauté for a few minutes.
4. Add the chopped tomatoes, turmeric powder, coriander-cumin powder, salt, and sugar to the pan. Cook until the tomatoes are soft and the mixture is well combined.
5. Add the cooked white peas to the pan and mix well. Let it simmer for 5-10 minutes.
6. To serve, place a generous portion of the sev usal in a bowl and top with a handful of sev and chopped coriander leaves. Serve with pav or dinner rolls on the side.
