Recipe:
1. In a large bowl, marinate the mutton with yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt. Let it sit for at least 30 minutes.
2. In a deep pot, heat ghee and add the whole spices – cumin seeds, cloves, bay leaves, cinnamon stick, and cardamoms. Stir until aromatic.
3. Add the sliced onions and sauté until golden brown. Then, add the marinated mutton and cook until the meat is tender.
4. In a separate pot, boil the soaked rice with water, a pinch of salt, and a splash of oil until it’s 70% cooked. Drain the water and set aside.
5. Layer the partially cooked rice over the mutton masala. Sprinkle mint leaves, coriander leaves, and garam masala on top.
