– 1 cup grated coconut
– 3-4 shallots, thinly sliced

– 4-5 garlic cloves, minced
– 1 teaspoon coriander powder
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon red chili powder
– 1/2 teaspoon fenugreek seeds
– 1/2 teaspoon mustard seeds
– 1/4 teaspoon asafoetida
– Tamarind pulp, as per taste
– Salt, to taste
– 2 tablespoons coconut oil
– Water, as needed

Recipe:
1. In a pan, dry roast the grated coconut until it turns golden brown. Allow it to cool and then grind it into a smooth paste using a little water.
2. Heat coconut oil in a deep-bottomed pan and add mustard seeds. Once they start to splutter, add fenugreek seeds, asafoetida, curry leaves, shallots, green chilies, ginger, and garlic. Sauté until the shallots turn golden brown.
3. Add the ground coconut paste to the pan and mix well. Cook for a few minutes before adding coriander powder, turmeric powder, and red chili powder. Stir to combine all the ingredients.
4. Pour in tamarind pulp and add salt to taste. Allow the mixture to come to a gentle boil.
5. Add the cleaned prawns to the pan and stir to coat them with the coconut-spice mixture. Cook for 5-7 minutes or until the prawns are cooked through.
6. Once the prawns are cooked, simmer the gravy for a few more minutes until it thickens to your desired consistency.
