1 liter full-fat milk

Instructions:

In a large pan, bring the milk to a boil and then reduce the heat to low.
Add lemon juice or vinegar to the milk, stirring constantly until the milk curdles. This may take a few minutes.
Once the curds and whey have separated, strain the mixture through a muslin cloth or a fine sieve. Rinse the curds under cold water to remove any trace of lemon or vinegar.
Tie the muslin cloth containing the curds into a tight bundle and hang it for about 30 minutes to drain excess water.
After 30 minutes, open the muslin cloth and knead the chenna (cheese) until it is smooth and free of lumps.
Divide the chenna into small equal-sized balls and set aside.
In a separate pan, mix the sugar and water and bring it to a boil, stirring until the sugar has completely dissolved.
Gently drop the chenna balls into the boiling sugar syrup, cover the pan, and cook for about 15 minutes.
Remove the lid and continue to cook the Rasgullas for another 5-7 minutes, allowing them to absorb the syrup and expand in size.
Once the Rasgullas have doubled in size and are spongy to the touch, remove them from the syrup and allow them to cool.
Garnish the Rasgullas with chopped nuts, rose water, saffron, or cardamom powder if desired.
Serve the Rasgullas chilled and enjoy the heavenly sweetness!
