– 1 cup ghee

– 1 cup whole wheat flour (atta)
– 1 cup jaggery or sugar
– 4 cups milk

– 1/2 tsp cardamom powder
– Pinch of saffron strands
– 1/4 cup desiccated coconut
– 1/4 cup raisins

Recipe:

1. In a heavy-bottomed pan, heat 1/2 cup of ghee and fry the edible gum (gond) until it puffs up. Remove and set aside.
2. In the same pan, add the remaining ghee and whole wheat flour (atta). Roast the flour on low heat until it turns golden brown and aromatic. Be sure to stir constantly to prevent the flour from burning.
3. Once the flour is roasted, add the milk and mix well to avoid any lumps. Cook the mixture until it thickens and the ghee starts to separate from the sides of the pan.
4. Add the jaggery (or sugar) and mix until it is fully incorporated into the mixture. Continue to cook until the mixture reaches a halwa-like consistency.
5. Stir in the cardamom powder, saffron strands, mixed nuts, desiccated coconut, raisins, and the fried gond. Mix well to combine all the ingredients.
6. Cook for a few more minutes until the flavors meld together and the halwa reaches the desired consistency.
7. Serve the Gond Pak Halwa warm, garnished with additional nuts and a sprinkle of saffron strands.
