Welcome to another delightful recipe from the heart of Maharashtra. Today, I’ll be sharing with you the authentic recipe for Tambda Rassa, a spicy and aromatic curry that is sure to tantalize your taste buds. So, put on your apron and let’s get cooking!

Ingredients:

– 500g mutton, cleaned and washed
– 2 onions, finely chopped
– 4-5 cloves of garlic, minced
– 1 inch ginger, grated
– 2 tomatoes, pureed
– 2-3 green chilies, slit
– 1 tsp turmeric powder
– 1 tbsp red chili powder
– 1 tsp coriander powder
– 1/2 tsp garam masala
– 1/2 cup grated coconut
– 1/4 cup chopped fresh coriander leaves
– Salt to taste
– 3-4 tbsp oil
– Water as needed

Recipe:

1. Heat oil in a pressure cooker and add the chopped onions. Saute until they turn golden brown.
2. Add the minced garlic and grated ginger. Saute for a few minutes until the raw smell disappears.
3. Add the tomato puree and green chilies. Cook until the oil separates from the masala.
4. Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.
5. Add the cleaned mutton pieces to the masala and mix well. Cook for 5-7 minutes on medium heat.
6. Add the grated coconut and mix well. Cook for another 2-3 minutes.
7. Add water as needed to cover the mutton pieces. Close the pressure cooker lid and cook for 4-5 whistles or until the mutton is tender.
8. Once the pressure releases, open the lid and add the garam masala and fresh coriander leaves. Mix well and cook for another 5-7 minutes.
9. Tambda Rassa is ready to be served hot with steamed rice or bhakri.
