Ingredients:
– 2 cups of idli batter

– Fresh coriander leaves for garnish

Spiced Potato Filling:
– 2-3 boiled and mashed potatoes
– 1 finely chopped green chili
– 1/2 tsp of turmeric powder
– 1/2 tsp of red chili powder
– 1/2 tsp of garam masala
– Salt to taste

Recipe:
1. Heat oil in a pan and add mustard seeds and curry leaves. Once the seeds start spluttering, add the spiced potato filling and cook for 2-3 minutes.
2. Take the idli batter and add salt to taste. Mix well.
3. Grease the idli molds and pour a spoonful of batter into each mold.
4. Add a spoonful of the spiced potato filling on top of the batter in each mold.
5. Now, cover the filling with some more idli batter.
6. Steam the stuffed idlis for 10-12 minutes.
7. Once done, let them cool for a few minutes and then gently unmold them.
8. Garnish the stuffed idlis with fresh coriander leaves and serve hot with coconut chutney or sambhar.
