Ingredients:
– 1 cup Bombay rava (semolina)
– 1 cup yogurt
– 1/2 cup water
– 1 tsp ginger, grated
– 1 tsp green chilies, finely chopped
– 1/2 tsp baking soda
– Salt to taste
– For tempering: 2 tbsp oil, 1/2 tsp mustard seeds, 1/2 tsp cumin seeds, 1/2 tsp urad dal, a pinch of asafoetida, few curry leaves, and 1-2 tbsp chopped coriander leaves

Recipe:
1. In a bowl, mix the Bombay rava, yogurt, and water to form a thick batter. Let it rest for 30 minutes.
2. In a separate pan, heat the oil for tempering. Add the mustard seeds, cumin seeds, urad dal, asafoetida, and curry leaves. Once the mustard seeds start to splutter, turn off the heat and mix in the chopped coriander leaves.
3. Add the tempering to the rava batter along with ginger, green chilies, baking soda, and salt. Mix well.
4. Grease the idli plates with oil and pour the batter into each mold.
5. Steam the idlis for 10-12 minutes or until a toothpick inserted comes out clean.
6. Once done, let the idlis cool for a few minutes before removing them from the mold.
7. Serve the Instant Bombay Rava Idli with coconut chutney or sambar.
