Ingredients:
– 500g Rohu fish
– 2 onions, finely chopped
– 2 tomatoes, pureed
– 3-4 green chilies, slit
– 1 tbsp ginger-garlic paste
– 1 tsp cumin seeds
– 1 tsp turmeric powder
– 1 tbsp red chili powder
– 1 tbsp coriander powder
– 1 tsp garam masala
– Salt to taste
– 2 tbsp oil
– Fresh coriander leaves for garnish

Recipe:
1. Clean the Rohu fish thoroughly and marinate it with turmeric powder and salt. Let it sit for 15-20 minutes.
2. Heat oil in a pan and fry the fish until it turns golden brown. Remove and set aside.
3. In the same pan, add cumin seeds and let them splutter. Then add the chopped onions and green chilies. Saute until the onions turn golden brown.
4. Add the ginger-garlic paste and cook until the raw smell goes away.
5. Now add the pureed tomatoes and cook until the oil separates from the masala.
6. Add the red chili powder, coriander powder, and salt. Mix well and cook for a few minutes.
7. Gently add the fried fish to the masala and coat it with the spices. Be careful not to break the fish.
8. Pour in 1-2 cups of water and bring the curry to a gentle simmer. Cover and cook for 10-15 minutes.
9. Once the fish is fully cooked, sprinkle garam masala and garnish with fresh coriander leaves.
10. Serve hot with steamed rice or roti for a truly authentic Punjabi experience.
