Ingredients:

1 cup basmati rice
1/2 cup soya granules
2 medium potatoes, diced
1 onion, finely chopped
2 tomatoes, finely chopped
1 green chili, finely chopped
1 tbsp ginger-garlic paste
1 tsp cumin seeds
1 bay leaf
2-3 cloves
2-3 green cardamom
1-inch cinnamon stick
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
Salt to taste
2 tbsp oil
Fresh coriander leaves for garnishing

Recipe:

Soak the soya granules in hot water for 10-15 minutes, then drain and squeeze out the excess water. Set aside.
Wash the rice and soak in water for 20-30 minutes. Drain and set aside.
Heat oil in a pan and add the cumin seeds, bay leaf, cloves, cardamom, and cinnamon. Sauté for a few seconds until fragrant.
Add the chopped onions and green chilies. Sauté until the onions turn golden brown.
Add the ginger-garlic paste and sauté for another minute.
Add the chopped tomatoes and cook until they turn soft and mushy.
Add the soaked soya granules and diced potatoes. Mix well and cook for 4-5 minutes.
Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for another 2-3 minutes.
Add the soaked rice and mix gently to combine without breaking the rice grains.
Add 2 cups of water and bring to a boil. Lower the heat, cover the pan, and cook for 15-20 minutes or until the rice is cooked and the water has evaporated.
Garnish with fresh coriander leaves and serve hot with raita or your favorite side dish.
