Ingredients:
– 2 cups vermicelli
– 2 tablespoons ghee
– 1 teaspoon cumin seeds
– 1 onion, finely chopped
– 1 green chili, finely chopped
– 1/4 cup green peas
– 1/4 cup chopped carrots
– 1/4 cup chopped bell pepper
– 1 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon garam masala
– Salt to taste
– Fresh cilantro for garnish
– Lemon wedges for serving

Recipe:
1. In a large pan, heat the ghee over medium heat and add the cumin seeds. Once they start to splutter, add the chopped onion and green chili. Sauté until the onion turns golden brown.
2. Add the vermicelli to the pan and roast it in the ghee until it turns golden brown and aromatic.
3. Stir in the green peas, carrots, and bell pepper, and cook for a few minutes until they begin to soften.
4. Sprinkle the turmeric powder, red chili powder, garam masala, and salt over the vermicelli and vegetables. Mix well to coat everything evenly.
5. Pour in 4 cups of water and bring the mixture to a boil. Reduce the heat to low, cover the pan, and let it simmer until the vermicelli is cooked through and the water is absorbed.
6. Once the Namkeen Seviyan is ready, garnish it with fresh cilantro and serve it with lemon wedges on the side.
