Today, I am excited to share with you my recipe for Methi Matar Malai, a creamy and flavorful dish that combines the earthy flavor of fenugreek leaves with the sweetness of green peas and the richness of cream. Ingredients:
– 2 cups fresh fenugreek leaves (methi), finely chopped
– 1 cup fresh or frozen green peas (matar)
– 1 onion, finely chopped
– 2 tomatoes, pureed
– 1/2 cup cashew nuts, soaked and ground into a smooth paste
– 1/2 cup cream
– 1 teaspoon ginger-garlic paste
– 1 teaspoon garam masala
– 1/2 teaspoon turmeric powder
– 1/2 teaspoon red chili powder
– Salt to taste
– 2 tablespoons ghee or oil
– Fresh coriander leaves for garnish

Recipe:
1. Heat ghee or oil in a pan and sauté the chopped onions until they turn golden brown.
2. Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
3. Add the tomato puree and cook until the oil separates from the masala.
4. Now add the chopped fenugreek leaves and green peas, and cook for 5-7 minutes until they are cooked through.
5. Stir in the cashew nut paste, garam masala, turmeric powder, red chili powder, and salt.
6. Cook for another 2-3 minutes, stirring constantly to ensure the masala doesn’t stick to the bottom of the pan.
7. Finally, add the cream and cook for a few more minutes until the gravy thickens.
8. Garnish with fresh coriander leaves and serve hot with roti or rice.
