Ingredients:
– 2 cups whole wheat flour
– 1/4 cup semolina
– 1/4 cup ghee or clarified butter
– 1/2 tsp salt
– Water for kneading
– 1/2 cup melted ghee for dipping baatis
– For the stuffing: 1/4 cup roasted gram flour, 2 tbsp crushed fennel seeds, 2 tbsp chopped coriander leaves, 2 tbsp chopped mint leaves, 1 tsp red chili powder, 1/4 tsp turmeric powder, 1/2 tsp garam masala, 2 tbsp melted ghee, Salt to taste
– For serving: Panchmel dal, garlic chutney, and churma

Recipe:
1. In a mixing bowl, combine the whole wheat flour, semolina, ghee, and salt. Gradually add water and knead the mixture into a firm dough. Cover and let it rest for 15-20 minutes.
2. In a separate bowl, mix together the roasted gram flour, fennel seeds, coriander leaves, mint leaves, red chili powder, turmeric powder, garam masala, ghee, and salt to taste to make the stuffing.
3. Preheat the oven to 375°F (190°C).
4. Divide the dough into equal-sized portions and shape them into balls. Flatten each ball and place a spoonful of the stuffing in the center. Close the edges and roll it into a smooth ball.
5. Place the baatis on a baking tray and bake for 40-45 minutes, or until they turn golden brown, flipping halfway through and brushing with melted ghee.
6. Alternatively, you can cook the baatis on a gas stove by placing them in a preheated clay tandoor or a heavy-bottomed pan with a lid, and cook for 40-45 minutes, flipping halfway through and brushing with melted ghee.
7. Once the baatis are cooked, serve them hot with panchmel dal, garlic chutney, and churma for a delicious Rajasthani meal.
