Ingredients:
– 1 kg mutton, cut into pieces
– 2 onions, finely sliced
– 2 tomatoes, chopped
– 3-4 green chilies, slit
– 1-inch piece of ginger, minced
– 4-5 garlic cloves, minced
– 1 tbsp coriander powder
– 1 tsp red chili powder
– 1/2 tsp turmeric powder
– 1/2 tsp garam masala
– Salt to taste
– 3 tbsp coconut oil
– Curry leaves
– Fresh cilantro for garnish

Recipe:
1. Heat the coconut oil in a pan and add the sliced onions. Saute until they turn golden brown.
2. Add the minced ginger and garlic, and saute for a couple of minutes until fragrant.
3. Next, add the chopped tomatoes and green chilies, and cook until the tomatoes are soft and pulpy.
4. Add the mutton pieces to the pan and mix well with the masala. Cook on high heat for a few minutes to seal the flavors.
5. Reduce the heat and add the coriander powder, red chili powder, turmeric powder, and salt. Mix everything together and let it cook for a few more minutes.
6. Pour in enough water to cover the mutton pieces and bring to a boil. Then, cover the pan and let it simmer on low heat until the mutton is tender.
7. Once the mutton is cooked, sprinkle garam masala and curry leaves over the curry and give it a final mix.
8. Garnish with fresh cilantro and serve hot with rice or chapati.
