– 2 tomatoes, chopped

– 1/2 tsp turmeric powder
– 1 tsp red chili powder
– 1 tsp coriander powder
– 1/2 tsp cumin seeds
– 1/2 tsp mustard seeds
– 1/2 tsp cumin powder
– 4-5 curry leaves
– Fresh coriander leaves, chopped
– Salt to taste
– 2 tbsp oil

Recipe:
1. Wash the brinjals and cut them into small cubes.
2. Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
3. Add the chopped onions and green chilies, sauté until the onions turn golden brown.
4. Add the ginger-garlic paste and sauté for a minute.
5. Now, add the tomatoes and cook until they turn soft and mushy.
6. Add the turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well and cook for a couple of minutes.
7. Add the brinjal cubes and season with salt. Mix well to coat the brinjals with the masala.
