Welcome to my kitchen where I will be sharing with you the authentic and mouth-watering recipe for Hyderabadi Chicken Dum Biryani in Telugu, a dish loved by many across the world.

Ingredients:
– 500g chicken, cut into pieces
– 2 cups basmati rice
– 1 cup thick yogurt
– 2 large onions, thinly sliced
– 4 green chilies, slit
– 4 cloves
– 4 cardamom pods
– 2-inch stick cinnamon
– 1/2 tsp saffron strands
– 1/4 cup milk
– 1/4 cup ghee
– 5 tbsp oil
– 2 tbsp chopped mint leaves
– 2 tbsp chopped coriander leaves
– Salt to taste

Recipe:
– Wash and soak the basmati rice for 30 minutes, then drain and set aside.
– Marinate the chicken pieces with yogurt, half of the fried onions, green chilies, cloves, cardamom, cinnamon, mint leaves, coriander leaves, and salt. Let it marinate for at least 1 hour.
– In a small bowl, mix the saffron strands with milk and set aside.
– Heat ghee and oil in a large pot, then add the marinated chicken and spread it evenly. Layer the rice over the chicken.
– Sprinkle the remaining fried onions, saffron milk, and 1/4 cup water over the rice.
– Cover the pot with a tight lid and cook on high flame for 5 minutes, then reduce the flame and cook for another 15 minutes.
– Turn off the flame and let it rest for 10 minutes. Once done, gently mix the chicken and rice together.
– Serve the delicious Hyderabadi Chicken Dum Biryani hot with raita and salan.
