Ingredients:
– 1 cup dried soybeans
– 2-3 tbsp oil
– 1 tsp mustard seeds
– 1 tsp cumin seeds
– 1 large onion, finely chopped
– 2-3 green chilies, slit
– 1-inch ginger, finely chopped
– 3-4 garlic cloves, finely chopped
– 1 tsp turmeric powder
– 1 tsp red chili powder
– 1 tbsp coriander-cumin seed powder
– Salt to taste
– Fresh coriander leaves for garnish

Recipe:
1. Rinse the dried soybeans and soak them in water for 6-8 hours or overnight.
2. Drain the soaked soybeans and pressure cook with water for 4-5 whistles until soft. Drain and keep aside.
3. Heat oil in a pan and add mustard seeds and cumin seeds. Once they splutter, add the finely chopped onion and sauté until it turns golden brown.
4. Add the slit green chilies, finely chopped ginger, and garlic to the pan and sauté for a few minutes.
5. Sprinkle turmeric powder, red chili powder, and coriander-cumin seed powder over the sautéed ingredients and mix well.
6. Add the cooked soybeans to the pan and mix until the spices coat the soybeans evenly. Add salt to taste and stir.
7. Cover the pan and cook the soybean mixture for 5-7 minutes on low heat, allowing the flavors to meld together.
8. Garnish with fresh coriander leaves and serve hot with roti or rice.
