Ingredients:
– 500g mutton, cut into pieces
– 3-4 medium-sized potatoes, peeled and cubed
– 1 onion, finely chopped
– 2 tomatoes, chopped
– 4-5 cloves of garlic, minced
– 1-inch piece of ginger, grated
– 1 tsp cumin seeds
– 1 tsp coriander powder
– 1 tsp red chili powder
– 1/2 tsp turmeric powder
– Salt to taste
– Fresh coriander leaves for garnish

Recipe:
1. Heat oil in a large pot and add cumin seeds. Let them crackle.
2. Add chopped onions and sauté until they turn golden brown.
3. Stir in the minced garlic and grated ginger. Cook for a minute until the raw smell disappears.
4. Add the mutton pieces to the pot and cook until they are browned on all sides.
5. Mix in the chopped tomatoes, coriander powder, red chili powder, turmeric powder, and salt. Cook until the tomatoes are soft and oil separates.
6. Pour in enough water to cover the mutton and bring it to a boil. Then, reduce the heat and let it simmer for about 30-40 minutes until the meat is tender.
7. Once the meat is cooked, add the cubed potatoes to the pot and continue to cook until they are soft and the broth thickens.
8. Garnish with fresh coriander leaves and serve hot with steamed rice or naan.
